This is one of my favourite go-to recipes when I’m craving something sweet but am trying to avoid refined sugars. It hits that sweet spot without the guilt or the preservatives or the other nasties, and gives me an energy boost as well.
I switch this recipe up every time I make it. You can add pretty much any seeds or nuts or other bits and pieces that you like… tweak it and see what combo you love best!
This is a refined sugar free, dairy free, raw vegan recipe that tastes amazing. For reals.
What you need:
1/2 cup almonds
1/3 cup walnuts (or other nut of your choice)
1/4 cup pitted dates
1/3 cup sultanas
1/3 cup desiccated coconut
1 tblspn coconut oil
2 tblspns cacao powder (or cocoa if that’s what you have on hand)
Optional extras: chia seeds, sunflower seeds, pepitas, LSA, maca powder, dried goji berries, pretty much anything you like!
What to do:
Throw everything in the blender and whizz it up until it is grainy. At this stage you can drizzle water in and continue mixing until it reaches a sticky consistency.
Line a slice tray with baking paper and spread mix evenly in tray then roll flat. Top with extra desiccated coconut and pop it in the fridge.
Slice into squares when it has set, after half an hour or so. Store in an airtight container in the fridge, it will keep for a week or more if it isn’t devoured by then.
Gobble it up! Yum!
